The English have Bubble and Squeak and the Scots have Rumbledethumps. Both dishes are primarly potatoes, cabbage, and onions, preferably leftover. Mix them together with seasoning, pan fry them, and serve with a fried egg on top.
Being me, and being a trained chef in days past, I have to crank things up a notch. Some of my Rumbledethumps ingredients were leftover from the night before, namely the carrots and the red peppers that were on the veggie tray on Christmas Eve. There were also some slightly dried out leftover cheese slices and meats. The potatoes were fresh steamed and and I also pan seared some fresh Brussels Sprouts, which are a step up from cabbage.
I mixed the veggies in a bowl, added diced cheese, meats, a glop of Miracle Whip, a glop of sour cream, salt, pepper, some Italian spice, stirred it together, and put it into baking dishes. These were topped with shredded mozza and other cheeses then fired into an oven at 375F for 25 minutes.
I removed the cooked Rumbledethumps from the oven and cooked three eggs, sunnyside up. One for each of us and topped the serving dishes with them.
Topped with salt, pepper, and some freshly chopped green onions with bacon and a few slices of orange on the side, it was perfect Scottish comfort food and a nice throwback to what my own Gran served on Christmas morning half a century back.
